Pack Yo’ Lunch

Word on the street is that today is National Pack Your Lunch Day. We know it’s tough to find inspiration on what to pack some days, but the health and financial benefits from packing a lunch far surpass those of going out to eat on the daily. Here at AFC HQ we’re split pretty evenly with team “Pack Your Lunch” and team “Let’s Lunch Out.” Some of us that do pack a lunch do get tempted to go out from time to time. There’s no denying that a good ole Chik-fi-la sandwich really does hit the spot. Packing a lunch is no easy task. We get in lunch ruts pretty regularly and are constantly sharing ideas of what to pack. Here’s what we’ve been talking about lately and some packed lunch inspiration to get you through the rest of the week and beyond!
Thai Chopped Chicken Mason Jar Salad: We’re loving the idea of a mason jar salad. You can pack them up to four days in advance and they’ll stay nice and fresh until you’re ready to eat. There is a science to the layering, but this Thai-inspired one from Lexi’s Clean Kitchen walks you through what to layer step by step. Once you’re ready to eat, simply pour the contents in a bowl, mix it up, and enjoy! Sounds so simple!
Pack a Pita: Years ago, before the advent of wraps, Pitas were a big thing. We recall stuffing these with an array of meats, cheeses, and veggies as kids and cheerfully toting them to school with us for lunch. They’ve taken a backseat to the wrap, but we’re vowing to give them another try sometime soon. Need some inspiration on what to stuff them with? We’ve got a few! We’re particularly eager to try the PB&J with a twist version.
Chickpea Spinach Salad: We’re fans of chickpeas around here and are known to add them to any and all salads. While we usually use them as a topping, they are the base of this yummy looking salad. It’s quick and easy to throw together in the morning and will keep you satisfied until quitting time.
Smashed White Bean and Avocado Sandwich: If you’re not a fan of lunch meat, this sandwich is for you. It looks incredibly fresh and flavorful. If you’re trying to cut down on bread you could try it as a lettuce wrap. Either way, you’ll be super satisfied.
